Blue Mermaid Chia Pudding

So when I make chia pudding, I go for the full fat coconut milk.  Its delicious and filling.  Native Foods makes a simple version that's free of fillers and therefore more gentle on your tummy.  

I also like to use the small 8oz mason jars to make single serve portions of chia pudding.  

If you want to include more protein feel free to add a scoop of your favorite protein powder and increase the amount of coconut milk (maybe use a larger jar!).

1 serving

Ingredients

2 tablespoons chia seeds

1 cup coconut milk 

1 teaspoon blue sprulina powder 

I like to eat with a serving of greek yogurt if I don't add protein!

Directions

Add all ingredients to the jar and shake to combine!  Refrigerate for a minimum of 2 hours.
